April 16, 2011 I recieved my Pro Card at the Fitness Atlantic WBFF Championships. I took the Overall win as the New WBFF Diva Fitness Model. The show was completely AMAZING!!!! It is such a pleasure and an honor to be apart of such an amazing organization. Special Thank you to Donna, Brian, Allison Dillet, Paul Dillet, Sherry, Andre Bricks St. Claire, John, Body Construct Girls, Family, and Friends!

Reese is the daughter of Body Construct Girl Allyson Genovese! Few months ago in our BC studio, Reese took her first steps! Now today, she went right for the deadlift bar!! this is what you call a fitness Star!! Be on the look out competitors, because Reese is training early to be the next future star of Fitness!!! Such a Cutie!!

Creamy Lemon Caper Salmon



Ingredients:

1 pound of salmon fillet (skinned)

1 cup dry white wine

2 teaspoons of extra-virgin olive oil

1 large shallot minced

2 tablespoons lemon juice

4 teaspoons of capers rinsed

1/4 cup low fat sour cream

1/4 teaspoon salt


Prepare:

Add 1/2 cup of white wine and enough water to just cover the salmon into skillets. Place Skillet on stove top. On high heat bring to a boil. reduce to a simmer, turn salmon over, cover and cook for 5 minutes. Remove from heat.

In the mean time, on a medium skillet over medium heat. Add shallots, and cook for about 30 seconds. Add the remaining 1/2 cup of dry white wine. Boil til slightly reduced for about 1 minute. Stir capers, and lemon juice. Cook for one minute longer. Remove from heat, stir in salt and sour cream. To serve top salmon with sauce.
