Allyson's Whole Wheat Eggplant Pizza


One of my clients named Allyson Genovese from my workout classes made this delicious healthy Eggplant Pizza. Definetly need to try it!! you can also find Allyson on Facebook! she is an amazing Chef!!


Ingredients

Garlic

shallots

Basil

Oregano

olive Oil

Cubed Eggplant

Can Diced Tomatoes

Salt and Pepper to taste

Low Fat Italian Cheese Blend

Whole Wheat Dough


Prepare

Sautee garlic, shallots, basil and oregano in olive oil 2-3 min. Add Cubed eggplant and diced tomatoes and continue to cook for about 5 min. Salt and Pepper to taste and put aside. Roll out dough, spread some olive oil, crushed garlic and basil. then add eggplant mixture and top with italian cheese blend. Bake at 350 for about 30 min or until done.

Lemon Herb Cod Fish


Around this time of year, when holidays are coming up, one of my favorite dishes is Lemon Herb Cod Fish. My family and I love this dish expecially on Christmas Eve Dinner. Most Italians, usually eat fish the night before Christmas. Being that I was raised in a very italian family, we kept up with the italian traditions. This is one of my favorite fish dishes!!I figured to share it with everyone!


Ingredients:
1 Pound of Fresh Cod Fish
1/4 cup of chopped frsh parsley
Olive Oil
Sliced Lemon
1 Fresh Lemon
salt and pepper to taste
Fresh garlic to your taste

Prepare
Add cod fish to pot of water and bring to a boil. Once it starts to boil and cod fish begins to float and appears white, it is now cooked. Drain the cod fish and add to serving dish. Drizzle olive oil, and squeeze 1 lemon to fish, add fresh parsely, garlic, salt, and pepper. Lastly add your fresh sliced lemons to the dish and stir.
Now its ready to SERVE!! ENJOY!

Roasted whole chicken and Veggies

Tonight I am making a delicious Whole Chicken with Veggies!!!
I figured to let you guys in on this simple, healthy, tasteful recipe!!

1 Whole Chicken
Poultry Seasoning, ( or any other seasoning you may like)
Sliced Onion and Garlic
Diced Sweet Potatoes
Sliced Red Peppers
1 sliced Lemon
Oilive Oil
1/2 Cup Chicken Stock

To Prepare:
Add whole chicken to a good size pan. Smother seasonings and olive oil in and around chicken.
Add sliced lemon, onions and garlic underneath the skin of the chicken.
Around chicken, add your diced sweet pototoes, onions and red peppers. Add seasoning such as oregano to potatoes, drizzle olive oil and poor throughout the pan chicken stock.
Bake at 375 degrees

To Serve: Remove Skin. Slice chicken and serve with your roasted veggies!!

Photoshoot today!

Hey everyone, just got back from my fitness photoshoot this morning. It was a great time!! We shot fitness wear, swimwear and workout type shots. We were working on portfolio images and also images for an upcoming magazine feature!! Check back on my blog to find updates on the magazine feature!!
The photographer was awesome, she is totally amazing, Adriana Photography!! She has a passion for photography and it definetly shows! I also shot a video clip of the photoshoot and will be posting that up soon!!

Red Potato Green Bean Salad


This is one of my favorite healthy salads that I grew up with. My mother would make me this salad all the time. This is one of my favorite recipes because it has a great source of protein, fiber ,vitamin C , low in sodium, cholesterol and fat.

Ingredients:

1/2 lb. tiny red potatoes unpeeled
1/2 lb. fresh green beans, trimmed and cut in half
2 1/2 tbsp. olive oil
2 1/2 tbsp. wine vinegar
1/4 red chopped red onion
1 tsp oregano
Salt and Black pepper to taste

Preparation:

Cook the potatoes in boiling water for 15 minutes. Add the green beans after 15 minutes of cooking and continue cooking for 5 to 7 minutes until the beans are crisp-tender and the potatoes are done; drain. Quarter the potatoes and add into a large bowl. Then add green beans, vinegar, oregano, red onion and olive oil. Toss. Season with salt and pepper to taste.

Lori-Ann's List of Healthy Food Choices


Every week I always get emails from family, friends and fans. The question is, “ What do you eat?” So I decided to put together my grocery list for you to help everyone start there way on healthy food choices. I do have to say that it is very important to eat every 2-3 hours for a total of 6 small meals per day and most importantly DO NOT SKIP breakfast!!! I cannot enforce that enough. Skipping breakfast does not give you a good start to your metabolism. You are actually slowing your metabolism down by not eating breakfast which does not help you in the end if your trying to lose weight. I always tell people this silly example, “you are like a car and you have to keep giving it fuel to let your motor keep running, if you don’t give it fuel the car will slow down.” Just like your metabolism, you have to feed your body to help burn more calories or your metabolism will slow down and you won’t lose weight. So start off your day with energy with a good healthy breakfast!!
Here is my Grocery list of foods:

Proteins:
Chicken
Grilled Fish ( salmon, cod, shrimp etc..)
LEAN meat
Turkey
Venison Meat (this meat is very lean)
Bison Meat
Low Fast Cottage Cheese with fresh berries
Veggies ( variety) peppers, butternut squash, asparagus, spinach lettuce etc..
Egg Whites
Low Sodium Tuna with tablespoon of extra virgin olive oil
No Salt added all natural Peanut Butter

Fruits:
Berries- raspberries, blueberries, strawberries
Apples
Bananas
10 calories Fruit Flavored Jello

Carbs:
Sweet Potatoes
Brown Rice
Plain Oatmeal
Eziekel Bread
Unsalted Plain Rice Cakes

Remember!!!! to always cook with extra virgin olive oil, it’s a healthier fat and also great for your skin as well. Don’t let your self go hungry eat every 2-3 hours and allow yourself 1-2 cheat meals a week. Drink PLENTY of water! If you are not a water drinker, you can always add crystal light to your water.

Lori-Ann Marchese- Fitness Model ,Bikini Competitor





Welcome to my Blog!!!! Before I start talking about all the wonderful things I have coming up for you I wanted to introduce myself.
I am a 25 year fitness model and bikini competitor. I am  also a dental hygienist part time. I have amazing support by family, friends and wonderful fiancĂ©. He as well is very much into staying fit and living a healthy life style. He has been an amazing support and motivator!! My coach Sherry is an amazing coach and has helped me tremendously! She has been there for me every step of the way in advancing my fitness career.
I have appeared in magazines nationally and internationally. Just a few to name I appeared in Diario Extra based in Costa Rica, D’Antro Magazine Costa Rica, and publications in Puerta Vallarta, Mexico and many more internationally magazines.
I have also appeared in Natural Muscle Magazine, Fitness and Physique Magazine and more. I will be soon featured in Physique Magazine and World Physique Magazine coming up this 2010.I recently won Ms. Bikini Fitness America New York, Ms. Model Fitness America New York, and Ms. Bikini New England.
I have met many wonderful athletes and have learned a lot through this wonderful fitness adventure. So, I would like to share my experience and help others achieve there goals. Here I will be sharing with you my venture as a fitness model, recipes, fitness tips, training routines, photoshoots and more!
