Parmesan Crusted Chicken Tenders

PARMESAN CRUSTED CHICKEN TENDERS

THIS IS ONE YUMMY RECIPE, ENJOY!

Ingredients:
olive oil cooking spray
1/4 cup whole wheat flour
2 large eggs
1/2 cup finely shredded Parmesan cheese
1 cup coarse dry whole wheat breadcrumbs
1 pound chicken tenders
1 tablespoon Italian seasoning
1 teaspoon garlic powder
1/4 teaspoon sea salt
1 cup marinara sauce, heated

Directions:
1.Preheat oven to 450°F. Foil a large pan and cover with cooking spray.
2. You will need 4 bowls. Place flour in a bowl. Lightly beat eggs in another bowl. Then mix Parmesan and breadcrumbs in a third bowl . Then Cover chicken tenders with Italian seasoning, salt and garlic powder in a medium size bowl. Coat each tender in flour,then dip the tender in egg and then roll in the breadcrumb mixture. Place the tenders on the prepared pan.
3.Bake for about 10 minutes then Turn each tender over and Continue bake for another 10 minutes until the outside of the tender are nice and crisp.

Use the Marinara Sauce to Dip your delicious paremesan crsuted chicken tenders!

April 16, 2011 I recieved my Pro Card at the Fitness Atlantic WBFF Championships. I took the Overall win as the New WBFF Diva Fitness Model. The show was completely AMAZING!!!! It is such a pleasure and an honor to be apart of such an amazing organization. Reese is the daughter of Body Construct Girl Allyson Genovese! Few months ago in our BC studio, Reese took her first steps! Now today, she went right for the deadlift bar!! this is what you call a fitness Star!! Be on the look out competitors, because Reese is training early to be the next future star of Fitness!!! Such a Cutie!!

Creamy Lemon Caper Salmon



Ingredients:

1 pound of salmon fillet (skinned)

1 cup dry white wine

2 teaspoons of extra-virgin olive oil

1 large shallot minced

2 tablespoons lemon juice

4 teaspoons of capers rinsed

1/4 cup low fat sour cream

1/4 teaspoon salt


Prepare:

Add 1/2 cup of white wine and enough water to just cover the salmon into skillets. Place Skillet on stove top. On high heat bring to a boil. reduce to a simmer, turn salmon over, cover and cook for 5 minutes. Remove from heat.

In the mean time, on a medium skillet over medium heat. Add shallots, and cook for about 30 seconds. Add the remaining 1/2 cup of dry white wine. Boil til slightly reduced for about 1 minute. Stir capers, and lemon juice. Cook for one minute longer. Remove from heat, stir in salt and sour cream. To serve top salmon with sauce.

MAHI MAHI with MANGO SALSA

This dish is so delicious! I made this tonight for Valentines day dinner!! This is Very healthy and to be sure to impress your taste buds!!
Ingredients: this recipe makes for 2 pounds of mahi mahi
1 Chopped Mango
1/2 cup finely chopped red onion
3 limes freshly squeezed
1 chopped tomato
1/2 cup chopped green pepper
1/4 cup cilantro flakes
1 can of pineapple tid bits include juice
2 lbs of fresh mahi mahi. Remove Skin
Whole Wheat Seasoned Breads Crumbs
Salt/Pepper to taste

Prepare:
Rinse and clean Mahi Mahi Fish. Bread the fish with the whole wheat bread crumbs, both sides.
On a shallow baking pan, spray the pan with pam spray. Then place the fish onto pan and bake at 350 degrees for about 15-20 minuts or until fish has become flaky and white.
Meanwhile in a bowl, Combine, pineapple, cilantro, tomato, green bell peppers, red onion, mango, freshly squeezed limes, salt and pepper. Mix together.
When fish is cooked, place fish onto dish, and top with mango salsa!!!
