FRENCH TOAST Topped with SAUTEED APPLES
Ingredients:
1 Cup low fat milk
1/4 cup sugar free maple syrup
2 large eggs
1 teaspoon of vanilla extract
1 teaspoon plus 1/4 teaspoon ground cinnamon
4 Slices about 1/2 inch thick multi grain bread
2 cups of thinly sliced macintosh apples (or your favorite choice of apples)
3 tablespoons of water
1/4 cup of chopped pecans
Preparation:
1. Whisk milk, 2 tablespoons of syrup, eggs, vanilla, and 1 teaspoon cinnamon.
Arrange the bread in a baking dish,, and pour the egg mixture over the top. Let is tand, turning each side twice, until egg mixture is absorbed about 15 minutes.
2. Combine apples, water, remaining syrup, and remaining cinnamon in a large sauce pan. Cook for about 15 minutes until apples are softened. Stir often.
3. Heat a non stick pan on medium heat. then reduce it to medium low, add the bread and cook until browned about 3-4 minutes on each side.
Once its done, put bread on a plate, and spoon apple mixture onto French Toast and sprinkle with pecans.
