Creamy Lemon Caper Salmon



Ingredients:

1 pound of salmon fillet (skinned)

1 cup dry white wine

2 teaspoons of extra-virgin olive oil

1 large shallot minced

2 tablespoons lemon juice

4 teaspoons of capers rinsed

1/4 cup low fat sour cream

1/4 teaspoon salt


Prepare:

Add 1/2 cup of white wine and enough water to just cover the salmon into skillets. Place Skillet on stove top. On high heat bring to a boil. reduce to a simmer, turn salmon over, cover and cook for 5 minutes. Remove from heat.

In the mean time, on a medium skillet over medium heat. Add shallots, and cook for about 30 seconds. Add the remaining 1/2 cup of dry white wine. Boil til slightly reduced for about 1 minute. Stir capers, and lemon juice. Cook for one minute longer. Remove from heat, stir in salt and sour cream. To serve top salmon with sauce.

MAHI MAHI with MANGO SALSA

MAHI MAHI with MANGO SALSA

This dish is so delicious! I made this tonight for Valentines day dinner!! This is Very healthy and to be sure to impress your taste buds!!
Ingredients: this recipe makes for 2 pounds of mahi mahi
1 Chopped Mango
1/2 cup finely chopped red onion
3 limes freshly squeezed
1 chopped tomato
1/2 cup chopped green pepper
1/4 cup cilantro flakes
1 can of pineapple tid bits include juice
2 lbs of fresh mahi mahi. Remove Skin
Whole Wheat Seasoned Breads Crumbs
Salt/Pepper to taste

Prepare:
Rinse and clean Mahi Mahi Fish. Bread the fish with the whole wheat bread crumbs, both sides.
On a shallow baking pan, spray the pan with pam spray. Then place the fish onto pan and bake at 350 degrees for about 15-20 minuts or until fish has become flaky and white.
Meanwhile in a bowl, Combine, pineapple, cilantro, tomato, green bell peppers, red onion, mango, freshly squeezed limes, salt and pepper. Mix together.
When fish is cooked, place fish onto dish, and top with mango salsa!!!
ENJOY THIS YUMMY dish!!!

Allyson's Whole Wheat Eggplant Pizza


One of my clients named Allyson Genovese from my workout classes made this delicious healthy Eggplant Pizza. Definetly need to try it!! you can also find Allyson on Facebook! she is an amazing Chef!!


Ingredients

Garlic

shallots

Basil

Oregano

olive Oil

Cubed Eggplant

Can Diced Tomatoes

Salt and Pepper to taste

Low Fat Italian Cheese Blend

Whole Wheat Dough


Prepare

Sautee garlic, shallots, basil and oregano in olive oil 2-3 min. Add Cubed eggplant and diced tomatoes and continue to cook for about 5 min. Salt and Pepper to taste and put aside. Roll out dough, spread some olive oil, crushed garlic and basil. then add eggplant mixture and top with italian cheese blend. Bake at 350 for about 30 min or until done.

Lemon Herb Cod Fish


Around this time of year, when holidays are coming up, one of my favorite dishes is Lemon Herb Cod Fish. My family and I love this dish expecially on Christmas Eve Dinner. Most Italians, usually eat fish the night before Christmas. Being that I was raised in a very italian family, we kept up with the italian traditions. This is one of my favorite fish dishes!!I figured to share it with everyone!


Ingredients:
1 Pound of Fresh Cod Fish
1/4 cup of chopped frsh parsley
Olive Oil
Sliced Lemon
1 Fresh Lemon
salt and pepper to taste
Fresh garlic to your taste

Prepare
Add cod fish to pot of water and bring to a boil. Once it starts to boil and cod fish begins to float and appears white, it is now cooked. Drain the cod fish and add to serving dish. Drizzle olive oil, and squeeze 1 lemon to fish, add fresh parsely, garlic, salt, and pepper. Lastly add your fresh sliced lemons to the dish and stir.
Now its ready to SERVE!! ENJOY!

Roasted whole chicken and Veggies

Tonight I am making a delicious Whole Chicken with Veggies!!!
I figured to let you guys in on this simple, healthy, tasteful recipe!!

1 Whole Chicken
Poultry Seasoning, ( or any other seasoning you may like)
Sliced Onion and Garlic
Diced Sweet Potatoes
Sliced Red Peppers
1 sliced Lemon
Oilive Oil
1/2 Cup Chicken Stock

To Prepare:
Add whole chicken to a good size pan. Smother seasonings and olive oil in and around chicken.
Add sliced lemon, onions and garlic underneath the skin of the chicken.
Around chicken, add your diced sweet pototoes, onions and red peppers. Add seasoning such as oregano to potatoes, drizzle olive oil and poor throughout the pan chicken stock.
Bake at 375 degrees

To Serve: Remove Skin. Slice chicken and serve with your roasted veggies!!
